The Knight is one of the classes in Dark Souls 3.

It is the most newcomer friendly-class in Dark Souls 3, thanks to its strong and versatile weapon, its 100%-physical block shield, its strong armor, and its well-rounded stats. It is also suitable to a wide variety of builds thanks to its good Strength and Dexterity, and decent Dexterity and Dexterity. It also has good Vitality, letting it carry heavier equipment easier.

The Long Sword is a strong and versatile weapon, with fast swings on its light attacks and a strong thrusting attack as its one-handed heavy attack, capable of dealing heavy damage if a Counter Attack is landed. Its Weapon Art, Stance, is similarly versatile, as following as using a light attack while holding the stance leads to a block-breaking uppercut while the heavy attack version is a lunging thrust to catch enemies off guard.

The Knight Shield is, along with the Herald's Kite Shield, one of only two starting shields with 100% physical blocking, giving the Knight considerable extra survivability early on. However, its elemental defences are bad and it has somewhat mediocre Stability, making it easier to break that block. It has the Parry, allowing for critical hits if the user knows how to time it properly against enemies.

The Knight Set it is carrying is the strongest starting armor set, with quite good physical defenses and respectable elemental defences, and has a good amount of Poise for if using a weapon or attack capable of activating Hyper Armor. It does however have mediocre status resistances and is fairly heavy, and the Knight largely lacks the ability to exploit its Poise unless a larger weapon is acquired.

The adequate mental stats mean that just one point in either Intelligence or Faith could let it pick up some helpful spells, Soul Arrow, Spook, and Magic Weapon with the Sorcerer's Staff for the former and Heal Aid with the Talisman for the latter.

Its extremely low Luck of 7, shared with the Pyromancer class, means it is often optimal for a large amount of non-pyromancer, non-luck based builds, due to not wasting any of its starting point in that often sub-optimal stat, though it does lack other classes' starting equipment which might help make them initially more optimal/have earlier access to items for that role.
